Will the text in the PSD stay selectable?

No. A PSD is a raster image, so text becomes pixels and is no longer selectable or searchable. If you need selectable text, convert the DOC to PDF or to a PSD document with OCR instead.

Does the PSD have a transparent background?

Page backgrounds render as solid white by default. For formats that support an alpha channel you can request a transparent background in the options so only the page content shows.

Are tables and charts from the DOC preserved in the PSD?

Yes. Tables, charts, shapes, and inline images are all part of the rendered page, so they appear in the PSD exactly as laid out in the DOC.
