Will the text in the JPG stay selectable?

No. A JPG is a raster image, so text becomes pixels and is no longer selectable or searchable. If you need selectable text, convert the DOC to PDF or to a JPG document with OCR instead.
Does the JPG have a transparent background?

Page backgrounds render as solid white by default. For formats that support an alpha channel you can request a transparent background in the options so only the page content shows.
Are tables and charts from the DOC preserved in the JPG?
