Will the text in the PNG be selectable?

No. A PNG is a raster image, so any text from the EPUB becomes pixels and is no longer selectable or searchable. Convert the EPUB to PDF or a document if you need live text.
How does PDF.to handle the reflowable layout of a EPUB?

Because a EPUB has no fixed pages, PDF.to applies a standard reading layout before rendering, so each PNG shows a clean, consistently formatted page rather than an arbitrary device view.
Does the PNG keep illustrations from the EPUB?
