Will the text in the SVG be selectable?

No. A SVG is a raster image, so any text from the EPUB becomes pixels and is no longer selectable or searchable. Convert the EPUB to PDF or a document if you need live text.
How does PDF.to handle the reflowable layout of a EPUB?
